Beat the Post Trip Blues— Creating a Summer Holiday at Home

I’ve just returned from an absolutely incredible trip to the picturesque island of Paros, Greece. But let me tell you, as I boarded my flight back home, those all-too-familiar “going home from holidays blues” began to creep in. I’m sure you can relate, right? No more endless days of basking in the sun, indulging in late-night alfresco dinners, sipping on exquisite wine, savoring delectable cuisine, and, most importantly, enjoying the company of family to share it with. However, just as I was about to surrender to the melancholy, a sudden realization hit me like a wave crashing on the shore: it’s only July, folks!

Welcome to “Summer Holiday at home.” It’s simpler than you might think, my friends. All you need are several large platters, a wooden cutting board, and a bit of creativity. Prepare some fresh, simple dishes, pop open a bottle of your favorite wine, and gather your nearest and dearest for a delightful evening. In fact, I even have an amazing recipe to share with you, courtesy of Maria, the fabulous chef from a cooking class I attended on the island of Paros. If you ever find yourself there, don’t forget to say hi to her for me! Now, I understand that not everyone is a culinary maestro, or wants to be one, so if that’s the case, you can always opt for your favorite local takeout and plate it on your favorite china. Trust me, everything looks divine when plated with love.

So, savor and embrace the days of this sun-kissed season. Let’s make the most of it by creating special moments and memories. Whether you whip up a feast or order in, remember to relish every bite, sip, and laugh.

RECIPE

Greek Salad with Bulgur Wheat

Ingredients

  • 250g bulgur wheat
  • 150g white cheese (feta)
  • 1 small bunch of fresh tomatoes
  • 1 small bunch of parsley
  • ½ small bunch of mint
  • 1 small bunch fresh spring onions
  • Seeds from ½ pomegranate
  • Dressing – mix together 1 soup spoon honey, 1 soup spoon wine vinegar, ½ cup olive oil, Salt and pepper

Directions

  • Soak the bulgur wheat in warm water for 45 minutes.
  • Prepare the herbs and vegetables by cutting them into small pieces and mixing them together. – Strain the bulgur wheat and mix it with the herbs and vegetables. Add the cheese and pomegranate seeds and mix together
  • Pour the prepared dressing over the salad and serve
