You Had Me at PicnicKristen Oostindie
I love eating outside in the summertime, so the idea of going on a picnic to a local park sounds like lots of fun! I hadn’t been on a picnic in years, and with all that’s been going on, I thought I’d give it another try.
Picnics can be as simple as eating some good take-out, making a few sandwiches, or going all out “Downton Abbey” style. My mom recently gifted me a red wagon, which allows me to tote lots of stuff along with me, so I decided to go all out.
First, I did a drive-by to choose my ideal spot. I knew I needed access to a bathroom, some shade, and an area that was free of crowds. Once I had my spot picked, I decided my menu would consist of Curried Chicken Wraps, German Potato Salad, Fresh Veggies, Assorted Cheeses, and a convenient Mason Jar Dessert. In order to streamline the process, I prepared all of the food on Saturday so all I had to do on Sunday was choose which dishes and flatware I would take along with me.
It was such a great afternoon—taking a few hours to clear our heads, enjoy the outdoors, and be grateful for all that we’ve been given. During this time, trying something new and getting that change of scenery is so worth it.
